Ingredients


  • 6-8 boneless chicken thighs, skinless or together with skin*
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 teaspoon red chili flakes discretionary or to taste
  • 1/2 little onion chopped
  • 4 garlic cloves chopped or minced
  • 2-4 tsp Italian seasoning
  • 1/3 cup homemade or low sodium chicken broth **PLEASE SEE NOTES BELOW
  • 2 Tablespoons heavy cream OR coconut lotion
  • Chopped fresh parsley and lemon slices for garnish , if desired

Directions


  • Season the chicken with salt, pepper, garlic powder, paprika, and chili flakes.
  • To cook at the Immediate Pot:
  • Press that the Sauté role (Normal setting) on the Immediate Pot and add the olive oil to the pot. (I use a 6 Quart Instant Pot DUO)
  • Set chicken at the Immediate Pot and cook on both sides for 2-3 minutes, or till golden brown. This will help to seal in the juices and keep it more tender. (you might need to work in batches based on the size and volume of chicken you're using). Remove from Immediate Pot once browned and place aside.
  • Melt butter Instant Pot and stir into the garlic and onions. Add lemon juice to deglaze pan and cook for 1 minute. Add chicken broth, lemon zest, and seasoning.
  • Set the chicken into the Immediate Pot, lock the lid, and then turn the valve to SEALING.
  • Select the Manual (old models) or Stress Cook (newer models) button and then correct the timer to 7 minutes.
  • It takes approximately 5-10 minutes to come to stress and begin counting down.
  • Once completed, release the strain after 2 minutes, then remove your Immediate Pot lid.
  • Remove chicken from Immediate Pot with tongs and put aside to a large serving plate. Stir in heavy cream (if using) into the Immediate Pot. Should you want your sauce thicker - it is possible to thicken with a cornstarch slurry (if low carb) or arrowroot starch slurry (or xanthan gum) by mixing 1/2 tsp cornstarch (arrowroot starch) mixed with 1 tsp cold water). Press off and flip Immediate Pot to SAUTE function. Cook and permit the sauce to bubble and simmer. Switch off and insert chicken back to the Immediate Pot to coat with sauce. Spoon sauce over chicken and sprinkle with parsley. Serve with your favorite sides if desired, and garnish with lemon slices.
  • To cook on the stove:
  • At a medium-sized skillet medium-high heat include olive and cook 4-5 on each side, or until chicken reaches 165 degrees. Transfer browned chicken to dish and set aside.
  • Return pan to warm and melt butter. Stir in garlic and onion. Add lemon juice to deglaze the pan and cook for 1 minute. Add chicken broth, lemon zest, and seasoning. Stir in heavy cream [in case you would like your sauce thicker - it is possible to thicken with a cornstarch slurry (if low carb) or arrowroot starch slurry (or xanthan gum) by mixing 1/2 tsp cornstarch (arrowroot starch) mixed with 1 tsp cold water].
  • When the sauce has bubbled and thickened up slightly, add the chicken back into the pan till hot. Spoon sauce over chicken and sprinkle with parsley. Serve with your favorite sides if desired, and garnish with lemon slices.


Recipe Notes

For poultry breasts: use 3 breasts, sliced horizontally in half.
I utilize 1/3 cup of broth along with the juice out of the lemon into my 6 Quart Instant Pot DUO without any troubles or burning indication - if desired you can increase the Quantity of liquid if this combination does not work on the Immediate Pot model
